Chả cốm Hà Nội – Hanoi fried mixed pork green rice
Cốm – baby rice is a special dish in Vietnamese cuisine. Com is seasonal dish associated with autumn. It can be served plain or with banana or combine other ingredients to make a main dish in meals. We now would like to introduce one of favor dishes in Hanoi – Cha Com.
INGREDIENTS :
- Minced pork: 150gr
- Raw pork ham: 250gr
- Egg: 2
- Fresh baby rice: 100gr(can used dried rice: 50gr)
- Salt: 1 teaspoon
- Black pepper: ½ teaspoon
- Dried onion: 0.5gr
- Fish sauce: ½ teaspoon
- Cooking oil: 2 teaspoons
- Banana leaves
PROCESS :
- Mix minced pork and raw pork ham with salt, pepper. Let it rest for about 30 mins.
- Add a little water on baby rice, then mix it with the above mixture well, can add one teaspoon of cooking oil. Place in chiller for 30mins.
- Use lotus leaf to place in to the steamer, shape the ham in small round cake and steam for 10 to 12mins.
- After steam, take it out and keep in cool in 1 hour.
- Lastly, put cooking oil in a pan to boil in high heat, fry them until both sides turn to golden brown.
