Nem rán – Vietnamese fried spring roll

Vietnamese cuisines are appreciated in foreign tourist’s eye because they have delicate flavor and simple ingredients but the quality of cuisines are delicious.

Vietnamese fried spring roll – Nem rán called “Cha Gio” in southern regions is one of the traditional dishes in Vietnam. Up to now, Nem Ran has been a familiar dish on the menu at all households on special days or family parties. The dish is now cooked in modern ways such as adding crab, shrimp, beef or chicken to change your tastes. We, however, are pleased to recipe of Nem ran as bellow:

INGREDIENTS

  1. Minced pork: 500gr (You can add crab or shrimp or beef if desired. If you do not eat pork, you can use crab and shrimp to be make seafood spring rolls).
  2. Carrot or yambean or bean sprout or kohlrabi or use all these vegetable:  200gr
  3. Beaten Eggs: 2 
  4. Chopped Onions: 1 
  5. Chopped fragrant mushrooms: 0.3 gr
  6. Black fungus: 0.5gr
  7. Vermicelli: 100gr
  8. Salt: ½ teaspoon
  9. Black pepper: ½ teaspoon
  10. Rice paper wrappers: 20 sheets
  11. Cooking oil 

METHODS:

 

   1.  STEP 1:

 

  • Clean the meat (pork or beef or shrimp) then mince the meat.
  • Put all Black fungus into hot water for 10 mins, fragrant mushrooms into tap water for 15 mins, Vermicelli into warm water for 5 mins. Then chop them all.
  • Carrot / yambean / kohlrabi: Slide them into small piece with the length of 3cm. the bean sprout is optional.

 

   2.  STEP 2:

 

  • Combine all of the chopped pork, carrot, mushrooms and onions in a large bowl. Add 2 eggs into the bowl. Put in salt and black pepper, stir the mixture well.

 

  • Put 1 rice paper in a large plate, place 1 spoon of filling mixture into the center of the rice paper; fold the bottom edge into the center, covering the filling. Fold in opposing edges and roll up tightly. 

 

  • Heat oil in a large pan over the medium heat.

  • Fry the spring rolls in oil until crispy and golden brown on all sides.

   3.  STEP 3: Making dipping sauce:

 

 

  • Chilly: 1 piece, cut into small pieces
  • Galic: 1 piece. Chop garlic into small pieces
  • Fish sauce: 2 spoons
  • Lime juice: 2 spoons. Vinegar is optional 
  • White sugar: 2 spoons
  • Boiled water: 10 spoons
  • Mix all ingredients in large bowl and add chilly and black pepper if desired. The sweetness and sourness can be adjusted to your taste..

 

This dish can be served with herbs.
